Easy Korean Tteokbokki Recipe with Ramen

 

Homemade Tteokbokki: Korea’s Favourite Comfort Food

Tteokbokki is one of Korea’s best-known street foods. Its chewy rice cakes, spicy-sweet sauce, and comforting flavour make it a favourite among both children and adults. Today, I made a generous homemade version with fish cakes, ramen noodles and plenty of vegetables.

Adding ramen noodles turns ordinary tteokbokki into rabokki, a popular combination of ramen and tteokbokki. It is filling, colourful and perfect for sharing with family or friends.


Ingredients



  • 400 g Korean rice cakes
  • 1 packet of instant ramen noodles
  • 2 sheets of Korean fish cake
  • 2 cups of water
  • 1 tablespoon gochujang (Korean red chilli paste)
  • 1 tablespoon gochugaru (Korean red pepper flakes)
  • 1 tablespoon soy sauce
  • 3 tablespoons sugar
  • Sliced onion
  • Chopped cabbage
  • Sliced carrot
  • Chopped spring onion
  • A little minced garlic, if desired

You can adjust the amount of vegetables according to what you have at home.

How to Make Tteokbokki

If you are using frozen or firm rice cakes, soak them in cold or lukewarm water until they separate and soften slightly. Cut the fish cakes into bite-sized pieces, then slice the onion, carrot, cabbage and spring onion.

Pour two cups of water into a large pan. Add the gochujang, gochugaru, soy sauce and sugar. Stir everything together until the gochujang dissolves and the sauce begins to simmer.

Add the rice cakes, fish cakes, onion and carrot. Cook them over medium heat, stirring occasionally so the rice cakes do not stick to the bottom of the pan.

When the rice cakes begin to soften, add the cabbage and ramen noodles. Continue cooking until the noodles are tender and the sauce becomes thicker. Add the spring onion near the end so it stays fresh and colourful.

Taste the sauce before turning off the heat. You may add a little more water if it becomes too thick, or simmer it slightly longer if you prefer a richer sauce.

What if your tteokbokki is finished but the flavour still seems a little bland or something feels missing?

Add a small amount of Korean instant ramen soup powder! Sprinkle in a little at a time, stir well and taste before adding more. It can quickly add extra spice, saltiness and savoury flavour to the sauce.

The amount is completely up to you, but be careful because ramen seasoning can be quite salty. I did not use any ramen soup powder in today’s tteokbokki because the sauce already tasted good. This is simply my emergency rescue trick for those times when the flavour does not turn out quite right.

Serve the tteokbokki immediately while the rice cakes are soft and chewy and the ramen noodles are still springy. The sweet and spicy sauce coats every ingredient, while the vegetables add colour and texture.
